Why CTC Leaf Survives a Milk Boil and Whole Leaf Does Not
Chai is one of the few brewing methods that actively punishes expensive leaf, and the reason is mechanical rather than snobbish.

What CTC actually means
The initials stand for crush, tear and curl, which is a literal description of what the machinery does to the leaf. Withered leaf passes between counter-rotating rollers with serrated surfaces that shred it rather than roll it gently.
The shredded material is then curled into hard, uniform granules roughly the size of coarse sand. Almost all tea grown in Assam for the domestic Indian market is processed this way rather than by the orthodox route. The method was developed for speed and yield, but it happens to produce exactly the leaf a milk boil needs.
Why the granule wins in a pan
Crushing ruptures the cell walls throughout the leaf, so the soluble compounds are available the instant hot water arrives. A CTC granule gives up most of what it holds within two or three minutes of a genuine boil.
In the pot, that speed matters because milk fat starts coating the leaf the moment it enters the pan and slows everything down. Orthodox leaf is built around slow, gentle infusion at a temperature well below boiling point. Dropped into a boiling pan with milk it yields colour and tannin but very little of what made it worth buying.
What you lose with good leaf
The aromatic compounds that distinguish a first-flush Darjeeling are volatile and start leaving above roughly eighty degrees. A rolling boil drives most of them off within a minute, and the milk conceals whatever managed to survive that.
What remains is a generic tea flavour that a cheap granule would have delivered for a fraction of the money. This is not a claim about quality; it is a claim about which compounds survive which processes. Spending more on leaf for a masala chai reliably produces a more expensive cup rather than a better one.
Reading the grades on a packet
CTC is sold by particle size, with abbreviations such as BP, PF, PD and Dust running from largest down to smallest. Smaller grades brew faster and darker but throw far more sediment into the glass and turn harsh a great deal sooner. PF or PD sits in a useful middle band where colour arrives quickly without leaving silt in the last mouthful.
Over the flame, dust grades are what most high-volume street stalls use, because speed and colour matter more than nuance at that pace.
The grade code describes particle size and tells you nothing whatsoever about the garden the leaf came from.
When orthodox is worth it
If you are making chai with no milk at all, orthodox leaf and a shorter, cooler brew is genuinely the better route. Assam orthodox has enough body to stand up to a modest amount of milk provided you keep the boil brief. Green tea in a Kashmiri kahwa is never boiled hard, for exactly the same reason a Darjeeling should not be.
The general rule is that the more milk you use and the longer you boil, the less the leaf grade can possibly matter. Match the leaf to the method rather than buying the best leaf available and hoping the method forgives you.
Buying leaf for a chai pot
Buy CTC in quantities you will finish inside a couple of months, because granules stale slowly but not indefinitely. A good granule is hard, uniform and almost black, and it should rattle in the hand rather than crumble under pressure. Grey, dusty or fibrous material in the packet suggests a lot of stalk went through the rollers alongside the leaf.
Price differences within CTC are real but small next to the difference that the dose in your pan makes. Getting the quantity right will improve your chai far more than trading up two grades of leaf ever will.
