Pouring Chai From a Height Changes Both the Temperature and the Foam

The long pour is not showmanship; it drops the drink to a drinkable temperature and builds a protein foam that changes the first sip.

There is a short answer about pouring chai between two vessels from a height and a useful one, and they are not the same. What follows is the useful one.

What the fall does to temperature

A stream of liquid falling thirty or forty centimetres has an enormous surface area relative to its volume for a fraction of a second. Heat leaves that surface both by contact with cooler air and by evaporation, and evaporation is much the larger of the two effects. A single long pour will typically take several degrees off a freshly boiled chai, which is the gap between painful and drinkable.

Repeating the pour two or three times between vessels compounds the effect and can drop it a good deal further. This is why a stall can hand you a glass straight off a boiling pan that you are able to drink immediately.

Where the foam comes from

Milk contains proteins that migrate to the boundary between liquid and air and hold bubbles open rather than letting them collapse. A falling stream drags air down into the receiving vessel and those proteins stabilise the resulting bubbles into a standing foam.

The same mechanism is behind the head on a well-poured coffee and the froth on a shaken cold drink. Chai with no milk in it will foam briefly and then fall flat, because there is nothing present to hold the structure. Higher-fat milk gives a denser, shorter-lived foam while lower-fat milk gives a lighter one that lasts a little longer.

Why the foam is worth having

The foam sits directly under your nose as you drink and concentrates aroma in the first two or three sips. It also insulates the surface slightly, which slows the formation of the skin that otherwise appears within a minute. Texturally it softens the entry of a strong cup and makes a heavily boiled chai feel less blunt.

None of this changes the chemistry of what is in the glass; it changes the order and the manner in which you meet it. That is a real effect rather than a decorative one, which is why the technique survived rather than being abandoned as theatre.

Doing it safely at home

Start with a very short pour of ten centimetres and increase the distance only as your aim becomes reliable. Use two vessels with proper lips and handles, not a saucepan and a glass, since a bad grip on hot liquid is genuinely dangerous. Pour into a vessel considerably larger than the volume you are moving, because the foam takes up more room than the liquid did.

Move the receiving vessel downward as you pour rather than raising the pouring one, which is easier to control.

A metal jug and a metal pan is the safest domestic combination and the one most stalls actually use.

What it costs you

Aroma compounds leave with the steam that carries the heat away, so a heavily pulled chai smells less than a gently poured one. A cardamom-forward cup loses noticeably more than a heavy ginger and clove cup, since the delicate aromatics go first.

The ratio does the work here: if you have just crushed good pods into the pan, a single short pour serves you better than three long ones. The trade is temperature and texture against aroma, and which side you want depends entirely on the cup. Knowing that trade exists is the difference between using the technique and copying it.

The two-vessel rhythm

Stall vendors pour back and forth because it cools, mixes, aerates and demonstrates the colour all in one movement. Mixing matters more than people assume, because a pan that has stood for a minute is stratified with fat at the top. A single vigorous stir achieves most of the mixing without any of the cooling, if that is all you need.

The pour is therefore doing four jobs at once, and you can substitute for any one of them separately. Choose the pour when you want all four and a stir when you only want the last of them.
