Chai Boils Over Because of a Skin, Not Because of the Heat

Milk forms a protein film that traps steam underneath it, and understanding that gives you three separate ways to stop it.

What is actually happening

Milk proteins and fat migrate to the surface as it heats and form a continuous film within a couple of minutes. Steam generated below that film cannot escape freely, so it pushes the whole layer upward as a foam. Because the film holds, the rise is sudden rather than gradual and gives almost no warning.

Plain water never does this, which is why a pan of tea alone behaves so differently. The climb is a mechanical trapping problem rather than a matter of the liquid being too hot.

Breaking the skin

A single stir at the right moment breaks the film, releases the trapped steam and drops the pan back instantly. Leaving a long-handled spoon resting across the pan disrupts the film as it forms and works surprisingly well. The traditional wooden spoon across the rim is doing exactly this rather than anything mysterious.

Blowing across the surface achieves the same thing for a few seconds if your hands are full. Any of these is faster and more effective than turning the flame down once the pan has already started to climb.

Pan choice and fill level

A tall narrow pan gives the rising foam considerably more vertical room to expand into before it reaches the rim. A wide shallow pan looks safer and is not, because the surface film is larger and the walls are lower. Filling a pan beyond about two-thirds removes your entire margin for error, since the foam needs a third of the height.

In the pot, a heavy base heats more evenly and produces a slower, more predictable rise that you can actually see coming in time. These structural choices matter more than the flame setting, which is nevertheless the first thing most people reach for.

Heat management

A moderate flame gives you a rise you can see coming; a fierce one gives you a rise you cannot. The pan continues heating for a good few seconds after the flame is turned down, especially with a heavy base.

Lifting the pan off the heat entirely is instantaneous and turning the knob is not. Induction hobs cut their power almost instantly where a gas flame leaves a hot pan base behind, which genuinely helps here.

The safest habit is to have somewhere to put the pan down before you start rather than after.

Why sugar and milk type change things

Sugar raises viscosity, which makes the foam more stable and the climb harder to stop. Higher-fat milk produces a denser film and a more dramatic rise than skimmed milk does. Ultra-heat-treated milk behaves differently again, since its proteins have already been altered and form a thinner, less stable film.

Ground fresh, plant milks vary enormously, with some barely foaming at all and others climbing considerably faster than dairy does. Knowing which milk you are using tells you how much attention the pan needs and how far you can safely walk away.

Milk fat, water hardness and hob power shift the result more than the recipe admits.

Cleaning up after one

Boiled-over milk on a hob burns onto the surface and hardens within minutes of contact. Wiping it while the hob is still warm but not hot is far easier than tackling it later. A paste of bicarbonate and water lifts hardened milk residue without scratching most surfaces.

By the second boil, milk that has run into a gas burner needs the burner cap lifted and cleaned or it will smell for days. Prevention takes two seconds and cleaning up afterwards takes twenty minutes, which is the entire argument in one sentence.
