The Strainer Matters More Than the Pan You Boil In

Mesh size decides how much sediment reaches the glass, and sediment is where most of the bitterness sits.

Everything below about the strainer used to pour chai comes from what actually happens rather than from what is supposed to.

What the strainer is removing

Beyond whole leaf, a finished pan of chai carries a suspension of very fine dust and broken spice particles. Those particles keep extracting after the pour, inside the glass, for as long as the tea remains genuinely hot. That is why the last third of a large cup so often tastes noticeably harsher than the first mouthful did.

A tight mesh stops that process at the moment of pouring and fixes the flavour at the point you wanted it. Granular CTC produces far more of this dust than orthodox leaf, which is why the problem shows up most in everyday chai.

Mesh size in practice

A conical tea strainer with a tightly woven mesh is the right tool, and it costs less than a single cafe drink. Kitchen sieves are usually far too coarse and pass most of the suspended dust straight through into the glass.

At the stall, if you can see daylight clearly through the gaps when you hold it up to a window, the weave is too open for chai. Straining twice through the same strainer is a workable improvisation when you have nothing finer within reach. A folded square of muslin laid over the strainer does the job properly, at the cost of a slower and messier pour.

The pan is less important

Any heavy-based pan that spreads heat evenly across the bottom will boil chai perfectly well for a decade. Thin pans scorch milk solids against the base, and that burnt note is the one genuinely unfixable failure in the process. Beyond base thickness, material and price make very little measurable difference to what ends up in the glass.

A tall narrow pan is easier to control than a wide shallow one, because chai climbs extremely fast once it decides to. Spend on the strainer and on a pan with a proper pouring lip long before you spend anything on the metal itself.

Keeping it clean

Tannin builds into a brown varnish across the mesh and turns stale within a couple of weeks of daily use. That film transfers a papery, faintly rancid taste into everything subsequently poured through the strainer. Rinse it under hot water immediately after use, and give it detergent and a soft brush once a week.

Ground fresh, a soak in hot water with a spoonful of bicarbonate lifts the film once a brush has stopped being enough on its own.

A neglected strainer will ruin better tea than a cheap pan ever managed to, and almost nobody thinks to blame it.

Pouring technique

Pour in a steady stream rather than tipping the whole pan at once and hoping the mesh somehow keeps up. A hurried pour floods the mesh, raises the liquid level above it and pushes sediment through the gaps at the rim.

By the second boil, holding the strainer a few centimetres above the glass aerates the tea slightly and drops the temperature usefully. Tap the strainer once against the rim afterwards rather than pressing the leaf, because pressing squeezes out bitterness. Both habits matter considerably more to the finished cup than they sound as though they ought to.

What to buy

A stainless conical strainer with a fine mesh costs very little and will comfortably outlast several kettles. Avoid designs where the mesh is glued into the frame rather than crimped, because that adhesive fails under boiling liquid.

Ground fresh, a handle long enough to keep your knuckles clear of the rising steam is worth more than any upgrade in material. Keep a second strainer in the drawer so one can dry out completely between pots instead of sitting damp all day. This remains the cheapest meaningful upgrade available to anybody who makes chai more than once a day.

Metal is easier to clean thoroughly and tolerates boiling liquid indefinitely. Nylon mesh works but stains faster and holds tannin in the weave, which is exactly the problem you are trying to avoid.
