Induction Changes How a Chai Pan Behaves, and Mostly for the Better

How induction actually heats

An induction hob generates a magnetic field that induces currents directly in the base of a ferromagnetic pan. The pan itself becomes the heating element, so almost no energy is lost heating the air or the surface around it. That makes it markedly more efficient than gas and considerably faster to bring a pan of water to boiling.

It also means the hob surface stays comparatively cool, which changes how spilled milk behaves when a pan climbs. The pan base has to contain enough iron for the field to work, so a magnet sticking to the bottom is the simple test.

Why response time matters for chai

Turning a gas flame down still leaves a hot heavy pan base that continues cooking for five or ten seconds afterwards. Induction stops inducing current almost immediately, though the pan itself still holds residual heat in its mass. For a drink where the difference between right and over-boiled is ninety seconds, that responsiveness is genuinely useful.

A climbing pan can be caught by dropping the power setting rather than by lifting the pan clear. This is the single biggest practical advantage for anyone who has ever lost a pan of chai over the rim.

Where induction is worse

The heat is concentrated over the coil rather than spread by a flame, so a pan wider than the ring heats unevenly. Very small pans may not be detected at all, since many hobs have a minimum base diameter to register a pan. You lose the visual feedback of a flame, which experienced cooks use more than they realise for judging heat.

At the stall, some hobs cycle the power on and off at low settings rather than genuinely reducing it, which makes a gentle simmer awkward. A pan that rattles or hums on induction is usually one whose base is not perfectly flat.

Choosing a pan for it

Stainless steel with a magnetic base is the straightforward choice and is what most chai pans already are. Aluminium and copper will not work without a bonded steel disc in the base, which good pans generally have. A flat base matters far more on induction than on gas, since contact area is what the field is coupling into.

A base matching the ring diameter avoids the uneven heating that causes scorched rings in a milk pan.

Check with a fridge magnet before buying anything, since the packaging is not always clear about this.

Adjusting your timings

Water reaches boiling faster on induction, so the leaf goes in sooner than your gas timings would suggest. The milk phase behaves similarly to gas once boiling, since the constraint there is the liquid rather than the heat source.

Over the flame, power settings on induction are numbers rather than a visible flame, which actually makes recipes more repeatable. Write down the setting that works for your pan and you have removed a variable that gas never lets you pin down. Most people find their total brewing time drops by a minute or two after switching.

Milk fat, water hardness and hob power shift the result more than the recipe admits.

Portable single hobs

A cheap portable induction hob is a genuinely useful addition even in a kitchen with a full cooker. It gives you a dedicated chai station that can sit anywhere with a socket, including a desk or a table.

The precise power settings make it easier to repeat a recipe than a back burner on a gas range. They are also the practical answer in rented accommodation with a poor cooker. For the price of a few weeks of cafe chai you get a hob that makes better chai than the cafe does.
