Gongfu Brewing and Chai Optimise for Opposite Things

Chinese gongfu brewing uses many short infusions to reveal how a leaf changes, while a chai pan extracts everything at once to build a single consistent drink.

Gongfu brewing and a chai pan both handle tea leaf with care and long practice. They are aimed at opposite outcomes, and comparing them clarifies what each is for.

Many short infusions against one long boil

Gongfu uses a great deal of leaf in a small vessel, infused for a few seconds at a time, poured off completely and infused again repeatedly.

A chai pan uses a modest amount of leaf in far more liquid and extracts it once, hard, until nothing significant remains to be taken.

One method deliberately produces a sequence of different cups; the other deliberately produces a single reproducible one.

Variation is the point in one and the enemy in the other

In gongfu, the interest lies in how the leaf changes across infusions, and a drinker is expected to notice the third cup differing from the first.

In a chai pan, variation between cups from the same pot is a defect, and much of the technique exists to suppress it.

That difference in goal explains almost every equipment choice each tradition makes.

The leaf is chosen accordingly

Gongfu rewards leaf with complexity to reveal, which means whole leaf handled to unfurl gradually and release different compounds at different stages.

Chai rewards leaf that gives everything quickly and consistently, and complexity that would be lost under milk and spice is simply not worth paying for.

Neither leaf performs well in the other method, which is why a fine orthodox tea is wasted in a chai pan.

Additions change what is knowable

Gongfu adds nothing, because milk, sugar and spice would mask exactly the differences the method is designed to expose.

Chai adds all three, which raises the floor of what a mediocre leaf can produce and lowers the ceiling on what an excellent one can show.

Both positions are coherent given their aims, and neither is a compromised version of the other.

Attention is spent in different places

Gongfu concentrates attention on the drinking, with a brewer working continuously and cups arriving in quick succession over a long session.

Chai concentrates attention on the making, after which the drink is handed over and the drinker's attention is free for conversation or work.

That is why one belongs to a table set aside for tea and the other belongs to a stall, an office and a kitchen doorway.

Questions readers ask

Can I make a chai latte without an espresso machine?

Yes. Heat milk to just below a simmer and froth it with a hand whisk, a plunger or a jar shaken vigorously. The foam is coarser than a steam wand produces but the drink is essentially the same.
